Wow, my boys are beautiful!


Just wanted to brag on the fact that my boys are so stinkin' cute! Goodness! Watch out, girls...these two are going to be studs. As challenging as it can be to have two boys only 13 months apart, it's also so worth it when they do something absolutely wonderful...which is a daily occurrence. They are treasures! Micah is now 21 months old and he's obsessed with cars. Gavin is 8 months old and just wants to do what his brother does. He's so sweet and cuddly. They are definitely two very different little people though. I can't wait to see the men of God they grow up to be! I really feel like they will love England and will come to life there! I can't wait to see it happen. Being a mom has been one of the hardest things I've ever done. It's a daily refining thing and I always feel like I'm making mistakes, but it's also the most rewarding thing I could ever do. I am entrusted by God with these two lives and I'm challenged to do my best in raising them to know, hear, trust, and obey Jesus. It's a BIG job, but with the Holy Spirit as my teacher and the grace of Jesus...it's possible! Help, Lord!
Man, they really are exceptionally cute though, right?? I mean even if I wasn't their mom!!!

I love this recipe!

Salmon with Couscous and feta
olive oil
4 (4 ounce) pieces of salmon
limes
salt, pepper, and garlic powder
butter
boxed couscous (Near East is the best)
tomatoes
feta
green onions

Preheat oven to 350 degrees.

Drizzle olive oil on the bottom of a glass pan. Place pieces of salmon (I like it without the skin) in the pan and season with salt, pepper, and garlic powder. Place small pads of butter on each piece of salmon. Squeeze lime juice over the top. Cook for 25-30 minutes or until it flakes with a fork.

Serve over the couscous and top with feta, chopped tomatoes, and green onion. It's also good with some type of nut as well, like toasted pine nuts or slivered almonds! MMMMmmmmm....so easy and good!

We eat it with pita chips and hummus as well. Enjoy!
